Intermediate Brewing

Measure, analyze, and control extraction for better and more consistent filter coffee

* Includes the manual, lunch, and certificate fees

From brewing coffee to measuring, analyzing, and monitoring extraction

The SCA Brewing Intermediate course builds on the Brewing Foundation course and is designed for brewers who want to better understand what happens during the brewing process. You’ll delve into the brewing cycle, wetting or blooming, the extraction of soluble substances, and how brewing equipment affects the final result.

You will examine how the coffee-to-water ratio, grind size, brew time, temperature, turbulence, water quality, and filter media—both individually and in combination—affect the brew. A key component is scientific measurement: you’ll learn to determine coffee strength using a refractometer, work with TDS, calculate extraction yield, and use the SCA Brewing Control Chart to analyze results.

By comparing different brewing methods and recipes—both technically and sensorially—you’ll learn to identify why a coffee is out of balance and what adjustments are needed. Maintenance and cleaning are also linked to consistent extraction and quality.

Who is this training for?

Brewing Intermediate is designed for baristas, brewers, trainers, and coffee professionals with experience in filter coffee. Brewing Foundation and Sensory Skills Foundation are recommended prerequisites. This course is ideal for participants who want to do more than just follow recipes; they want to measure, explain, and specifically adjust the extraction process.
