The focus shifts from simply tasting well yourself to building reliable systems. You will learn to set up and manage sensory panels, select and train panel members, and choose evaluation methods that are appropriate for the research question. In doing so, you will work with analytical, discriminative, and descriptive approaches and develop a systematic method for measuring and documenting coffee characteristics.

You will learn to generate reproducible sensory data and interpret results critically. Identifying and evaluating the qualities of specialty green coffee, as well as accurately measuring and describing the characteristics of brewed coffee, are also linked to professional quality programs and their application within a coffee company.

Who is this training for?

Sensory Skills Professional is intended for experienced sensory professionals, quality managers, buyers, roasters, trainers, and professionals responsible for coffee evaluation or quality programs. SCA Sensory Skills Intermediate is a prerequisite. Green Coffee Intermediate and Roasting Intermediate are recommended by the SCA as supplementary preparation.

About the Instructor

Laurens DaCosta is an award-winning barista and SCA trainer with over sixteen years of experience. With his practical and inspiring approach, he helps both professionals and coffee enthusiasts take their coffee quality to the next level.

“This was without a doubt the most challenging SCA training I’ve taken so far. Not because the material is hard to understand, but because it demands so much from your own observations. You learn to taste much more precisely, evaluate more objectively, and—above all—explain why you taste something the way you do. That makes it tough at times, but it’s precisely because of that that you go home with a wealth of new knowledge and confidence.”

Martijn

“As a Q-grader in training, I wanted to further develop my sensory skills. This training was a perfect fit for that. Your evaluations are scrutinized, but always with the goal of helping you improve. I really appreciated that.”

Sophie van Dijk

“Intense, challenging, and incredibly educational.”

Kevin

“I had expected it to be mostly theory, but in fact you’re constantly tasting, comparing, and analyzing. Because of that, time just flies by, even though the days are pretty intense.”

Richard

“Professional in every respect. The trainer challenges you to keep thinking critically and not to jump to conclusions. I think that was perhaps the most valuable part of the training.”

Anne-Marie

“It wasn’t the easiest training course I’ve ever taken, but it was one of the most interesting.”

Tom

“Our quality department wanted to bring more structure to the process of evaluating coffee. This training was a huge help in that regard. We now use many of the methods covered during the training.”

Quality Team Origin Coffee

“If you really want to dive deep into the field of sensory, this is the training course you need to take.”

Bas

“You can tell from everything that this is designed for professionals. A lot is expected of you, but in return, you gain a tremendous amount of knowledge and receive personalized feedback.”

Linda de Groot

“Afterward, you’ll not only see coffee in a different light, but also your own way of tasting it. I think that was perhaps the biggest takeaway for me.”
