Discover why good water makes all the difference for your coffee

Water is the main ingredient in coffee, but it often receives surprisingly little attention. Yet the composition of water plays a major role in determining how your coffee tastes and how well your coffee machine continues to function. During the “Water and Coffee” workshop, you’ll discover what’s actually in water and why not all water is equally suitable for coffee.

You’ll get hands-on experience measuring and comparing different types of water. Concepts such as pH, ppm, TDS, total hardness, carbonate hardness, and alkalinity are explained in an accessible way. You’ll then experience firsthand how different water compositions affect extraction and flavor.

We’ll also look at limescale and various options for filtration and water treatment. This workshop combines coffee flavor, water chemistry, and machine maintenance into one practical session, allowing you to make more informed choices at home or at work.

Who is this workshop for?

The “Water and Coffee” workshop is designed for home baristas, coffee enthusiasts, and hospitality professionals who want more control over both their coffee quality and their equipment. Whether you’re just starting out or already have a lot of experience, if you want to understand which water is best for your espresso machine, this workshop offers practical answers. This workshop is also a great fit if you regularly deal with limescale buildup or want to know which filter system is right for your situation.

What You'll Learn

After the workshop

About the Instructor

Laurens DaCosta is an award-winning barista and SCA trainer with over sixteen years of experience. With his practical and inspiring approach, he helps both professionals and coffee enthusiasts take their coffee quality to the next level.

“I knew that water affected coffee, but I didn’t realize it could make such a big difference. During the workshop, we tasted how different water compositions affected the same coffee. The difference was sometimes really striking. Since then, at home, I’ve been paying attention not only to my beans and grind size, but also to the water I use.”

Jasper

“A very interesting topic, and a nice change from espresso or latte art. Tasting and comparing the coffees myself was especially fun.”

Marieke de Jong

“I attended with two colleagues because we’re working on improving the quality of our coffee at work. Beforehand, we mainly had questions about beans and equipment, but we learned that water is just as important. We came away with a lot of practical information that we can actually put to use.”

Robin

“I never thought I’d get so excited about minerals in water, haha. It was a surprisingly fun workshop.”

Sanne

“I’m pretty passionate about espresso at home and had already experimented a lot with beans, temperature, and extraction. Water was actually my blind spot. This workshop provided exactly the in-depth knowledge I was looking for. Some parts are quite technical, but by tasting along the way, you gain a much better understanding of what’s being explained.”

Thomas van Dijk

“We came mainly out of curiosity and had a really fun and educational afternoon. After that, you definitely look at a simple glass of water differently.”

Linda & Mark

“I deal with coffee a lot in my work, but water never really got much attention. I found its effect on both flavor and equipment particularly interesting.”

Dennis B.

“That’s quite a lot of information to take in all at once, but luckily it’s not just theory. By testing and tasting things for yourself, you’ll remember it much better.”

Nina

“Our coffee machine was always well-maintained, so I thought we had everything under control. During this workshop, I discovered that water quality goes far beyond just preventing limescale buildup. The right composition can also make a huge difference in the taste of your coffee. This is very valuable for our business.”

Peter Verhoeven

“More technical than the other coffee workshops I’ve taken, but that’s exactly what made it interesting. I learned a lot of new things.”

Eva

“You can spend hundreds of euros on good beans and equipment, but if your water isn’t right, you’re apparently still missing out on a lot. For me, that was definitely the biggest eye-opener of the day.”
